Ingredients
- 1 clove roasted garlic, coated in olive oil
- 1 baguette sliced into 1 inch pieces, each brushed with olive oil
- 1/4 cup cottage cheese (small curd)
- 1/4 cup sour cream
- 1/2 tsp. horseradish
- 1/8 tsp. lemon juice
- 1 (4 oz.) package of lox, available in the refrigerated section of your local grocery store
Method of Preparation
Begin by peeling the garlic clove and coat in a small amount of olive oil. Wrap in tin foil and place into an oven at 350 F for about 10-15 minutes. Meanwhile, slice the baguette into 1 inch pieces and brush each piece with a small amount (1/2 tsp.) of olive oil. Place onto a baking tray and lightly toast at 250 F for about 8-10 minutes. Remove and let cool. Mix together the remaining ingredients: cottage cheese, sour cream, horseradish and lemon juice. Add in the roasted garlic and stir to evenly distribute all ingredients. Spread a heaping teaspoonful onto each slice of the toasted baguette and top with a small slice of lox. Garnish with a piece of dill. The garnish is optional but it does add delicious flavor.
