This simplistic yet scrumptious sauce will have you scraping the bowl for the last drop! I used the last of the fresh tomatoes from the garden which lended to the incredibly sweet flavor of this sauce. You can of course substitute cherry tomatoes from the grocery store and you’ll get just about the same sweet flavor. You’ll also want to find fresh herbs (if you can) which allows for wonderful earthy tones. Substitute in dried ones if fresh herbs aren’t available in your area. Definitely remember the goat cheese and butter at the end as it finishes the sauce beautifully. It’s perfect for an end of summer meal and is easy to prepare. You can make this sauce ahead of time and freeze for up to 3 months and defrost when ready to use. Making the sauce ahead of time allows for a quick weekday meal as all you’ll have to do is boil the pasta, warm up the sauce, and serve!
Ingredients:
- 2 pounds total (not each) of red cherry tomatoes, sun gold tomatoes* (can substitute yellow cherry tomatoes), and plum tomatoes (as fresh as possible)
- 1-2 tbsp. freshly chopped basil
- 2 tsp. freshly chopped oregano
- 2 tsp. freshly chopped Italian parsley
- 3-4 small garlic cloves
- 1/2 c. olive oil
- 1 tbsp. parmesan cheese
- Pinch of sea salt, white pepper, nutmeg
- 2 oz. fresh goat cheese (add in at end)
- 2 tbsp. butter (add in at end)
- 1 lb. bow tie pasta
Method of Preparation:
- Quarter all tomatoes and place into a large stock pot. In a food processor (use chopping blade), blend together the fresh herbs, garlic, olive oil, parmesan cheese, and the spices.
- Add the blended mixture to the stock pot and gently mix. Simmer on medium-low until cooked down to form a sauce; about 45 minutes – 1 hour.
- You may choose to place a lid on the pot on and off during the cooking time. After the sauce has reduced, add in the goat cheese and butter. Stir to mix in completely.
- With about 20 minutes before the sauce will be ready, bring a pot of water to a boil.
- Boil the bow tie pasta according to package instructions.
- Add the cooked pasta to the sauce when ready.
- Serve immediately! Pairs incredibly well with a fresh and crusty loaf of French bread.
