Parsnip and Carrot “Fries” with Ginger Spiced Hummus

Are you looking for a quick and healthy side dish or appetizer? You have come to the right place! You should have most of these ingredients on hand already in your pantry. Luckily the hummus comes together in the time it takes for the “fries” to bake in the oven and that means in just about 35 minutes, you can be snacking on this delicious dish. We were looking around for seconds on the “fries” after we ran out so we suggest making a double batch of this one!

Both the roasted carrots and parsnips are sweet and crispy thanks to the coating of cornstarch and they stand up perfectly to the ginger spiced hummus. The hummus is so smooth and creamy and the fresh ginger flavor really stands out. They are perfect to enjoy alone as a hot appetizer or as a light side dish to complement chicken, fish, or pork.

Parsnip and Carrot “Fries”

Description

A delicious and healthy side dish or appetizer that is sure to be a crowd pleaser.


Ingredients

Scale

For the “fries” 

  • 1/2 lb carrots, peeled and sliced into “fries” 
  • 1/2 lb parsnips, peeled and sliced into “fries” 
  • 1 teaspoon dried thyme
  • 1/4 cup parmesan cheese 
  • 1/2 teaspoon each salt and pepper 
  • 1/4 cup olive oil 
  • 1 tablespoon cornstarch 

Ginger Spiced Hummus  

  • 15 ounce can chickpeas, drained and rinsed
  • juice from 1/2 lemon 
  • 1 tablespoon tahini 
  • 1 tablespoon olive oil 
  • 2 tablespoons water 
  • 1 clove garlic, crushed 
  • 1 teaspoon fresh ginger, grated 
  • 1/4 teaspoon cardamom 

Instructions

  1. Preheat oven to 375F. 
  2. Peel and slice the carrots and parsnips into a french fry shape and arrange on a sheet tray in 1 flat layer. 
  3. Combine thyme, cheese, salt, pepper, and olive oil in a small bowl and brush evenly to coat all sides of the “fries.” 
  4. Place the tablespoon of cornstarch in a small sieve and tap to evenly disperse the cornstarch over the “fries.”
  5. Bake in preheated oven for 30-35 minutes, or until browned and crispy. 

Ginger Spiced Hummus

  1. Drain the rinse the chickpeas and place into a food processor fitted with a blade or place into a blender. 
  2. Crush the garlic and grate the ginger. Place into the food processor. 
  3. Take all remaining ingredients and place into food processor. Blend on high for 1-2 minutes or until smooth and creamy. 

Notes

* Can use a crinkle cutter to achieve the look of a crinkle-cut fry. 

* The “fries” are best served warm with room temperature hummus.
