Description
These cute mini cheesecake bites are perfect to serve as appetizer sized dessert.
Ingredients

- 8 ounces cream cheese, softened
- 1 egg
- 1/3 cup sugar
- 1/2 tsp salt
- 4 ounces mini chocolate chips
- 1 1/4 cup graham cracker crumbs
- 2 tablespoons sugar
- 5 tablespoons butter, melted
Instructions
- Take the softened cream cheese, egg, sugar, and salt and beat until well combined and smooth.
- Fold in the chocolate chips. Set aside.
- In a separate bowl, combine together graham cracker crumbs, sugar, and melted butter. Reserve 1/4 cup of the mixture.
- In a mini cupcake tin, scoop out about 1-2 teaspoons of the graham cracker mixture and press firmly into the mold with a small spoon.
- Spoon about 1-2 teaspoons of the cream cheese mixture on top being careful not to overfill.
- Sprinkle on the remaining 1/4 cup of graham cracker mixture on top of each mini cheesecake bite.
- Bake at 325F for 16-18 minutes or until a knife inserted into one comes out clean.
Notes
Mini-chocolate chips work best. If you have regular sized chocolate chips, you can roughly chop them with a sharp knife and use them as a substitute for the mini-chocolate chips.
If you do not have graham cracker crumbs, you can take whole graham crackers and crush them by hand or in a food processor until finely ground.
