Hands down, granola is always best homemade. It’s easy to prep and personalize with lots of ingredient choices and has a quick bake time. Creating your own is the best part! Start with old fashioned oats, add in seeds like flax, pepita, or sunflower. Then, think about the addition of dried fruits like cherries, apricots, or plums. Extras to the mix might be shredded coconut or dark chocolate chips. Add coconut oil, pure vanilla, or perhaps maple syrup or even agave to bind the ingredients. You get the idea that the possibilities are endless. We created a layered Greek yogurt and apricot all-fruit parfait and then topped off this light and creamy dish with our homemade version of granola. We added on chopped dried apricots to compliment the apricot all fruit and unsweetened coconut. Finish off this parfait with a drizzle of agave for the lightest touch of sweetness. This is a perfect breakfast for two or double the recipe and make a few more for a brunch! You’ll have plenty of leftover granola which can be stored in an airtight container for up to two weeks or placed in the freezer for upwards of 2 to 3 months.

Homemade Granola and Apricot Parfait

A light and healthy breakfast or snack. Also perfect to serve for a brunch.
Ingredients
Homemade Granola
- 2 cups rolled oats
- 1/3 cup pepita seeds (pumpkin seeds)
- 1/4 cup slivered almonds
- 1/4 cup chopped walnuts
- 2 tablespoons flax seeds
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 tablespoons agave
- 2 tablespoons coconut oil
Apricot Parfait
- 1 cup Greek yogurt
- 2 tablespoons Polaner All Fruit (apricot)
- 2 tablespoons homemade granola
- 2 dried apricots, chopped
- 2 teaspoons unsweetened shredded coconut
Instructions
- In a large mixing bowl, place the following ingredients: rolled oats, pepita seeds, slivered almonds, chopped walnuts, flax seeds, cinnamon, and nutmeg. Mix together.
- Add on agave syrup and coconut oil. Mix thoroughly to combine.
- Lay mixture on a large sheet tray covered with a non stick baking sheet. No non stick baking sheet? Use parchment paper, or a non stick cooking spray.
- Bake in a pre-heated 350F oven for 15 minutes. Remove and allow to cool. Store in an airtight container or use to make the Apricot Parfaits. (See directions below.)
Apricot Parfaits
- Place 1/4 cup of Greek yogurt on the bottom of 2 parfait glasses.
- Top yogurt in each parfait with 1 tablespoon of the Polaner All Fruit.
- Layer on another 1/4 cup of Greek yogurt in each parfait glass.
- Decorate the top of each glass with 1 dried apricot (chopped), 1 teaspoon of unsweetened shredded coconut, and 1 tablespoon of the homemade granola.
- Serve and enjoy immediately.
Notes
Granola makes about 3 cups. We used 1/4 cup to make the apricot parfait but you will have lots leftover to use for other delicious treats.
Keep in an airtight container. – Will stay fresh for about 2 weeks.
Alternatively, you can freeze for 2-3 months also in an airtight container.
