Fig and Prosciutto Baguette

This almost no bake appetizer takes just 20 minutes to prepare and is a perfect complement to just about any main course. The key is finding the freshest baguette in your area. Do a little digging to find a good bakery where you live, and I promise you that it’ll be worth it. The only “cooking” time involved is toasting the bread. The toppings you can add cold right from the refrigerator making this dish easy to pull together right before serving.

Ingredients: 

  • 1 loaf fresh, salted baguette
  • 2-3 tbsp. olive oil
  • 8 oz. prosciutto
  • 1 package of figs (quartered) (6 came in the package, I did have leftovers and used them as a pizza topping)
  • 4 oz. goat cheese, crumbled
  • 1-2 tbsp. honey (optional)

Method of Preparation 

Slice the baguette into 1 inch pieces. Depending on the size of your baguette, you should end up with about 16 slices. Brush with olive oil and toast at 350 F until golden brown; about 7-10 minutes. While your bread is toasting, quarter the figs and set aside. Lay out a small piece of prosciutto per slice. Remove the toast from the oven and lay a small piece of prosciutto on top of each slide of bread. Place 1 quarter of the fig on top of the prosciutto followed by a sprinkle of crumbled goat cheese.  Place onto a serving platter and drizzle lightly with honey, if desired. You’re ready to serve!
