This simple dish is full of zesty lemon and garlic flavor and doesn’t require a lot of prep work to put together. In fact, you only need 30 minutes from start to finish before you’re able to enjoy one of our favorite vegetables! When you’re looking for artichokes, be sure to find one with firmly packed green leaves and store them in the refrigerator until you’re ready to prepare them.
Artichokes have a delicious earthy flavor and are also incredibly versatile. They can be grilled, roasted, or steamed. Eat them on their own or add the cooked hearts to pasta salads or this easy weeknight chicken dish. You can even mash them up to make a dip!
Artichokes are a bit messy to eat but so fun! To eat the leaves, you just scrape off the soft part on the bottom with your teeth. When you get down to the heart, be sure to remove the choke (the fuzzy part) before enjoying (in our opinion) the best part!

A simple springtime side dish full of zesty lemon garlic flavor!
Ingredients
- 4 artichokes, large
- 1 lemon
- 2 cloves garlic, minced
- 1/3 cup olive oil
- 4 teaspoons parmesan cheese freshly grated
- 4 teaspoons breadcrumbs
Instructions
- Cut off 3/4″ across the top of the artichokes and then cut off the excess stem to create a flat bottom.
- Using kitchen scissors, trim the tips off of each leaf to remove the small thorn.
- Gently pry open the leaves to create a space for the dressing. Set aside.
- Take a small bowl and add the juice of the squeezed lemon, minced garlic, and olive oil. Whisk together.
- Equally divide the marinate and pour in between and over each of the four artichokes.
- Sprinkle parmesan and bread crumbs on the top of each one. (approx. 1 tsp. each)
- Place into a shallow bowl and cover the top tightly.
- Place bowl into the microwave and steam on high for 15 minutes until the leaves pull off and the inside is tender.
Notes
Note that cooking time may vary depending on your microwave. Be sure to check periodically throughout the 15 minute cooking time so as not to overcook.
Overcooked artichokes will appear dry; especially on the outer leaves
